Camping Recipes

We've got 3 camping trips planned over the next 3 months. I've never been in charge of food for camping before. So help me out and post some easy camping recipes. We'll have a Coleman grill and a fire. Also any tips on things is should bring would be helpful. Thanks!

I personally like to keep things simple. If you're going to be arriving in the evening after work, setting up camp, and trying to cook dinner, I love Caren's idea of just using a frozen skillet meal on the propane grill. That way you don't have to wait for the fire to heat up and you can spend more time focusing on setting up camp and relaxing before it gets dark. Eggs are always yummy for breakfast and easy to make. That's all the tips I have for now, since I really don't like to spend my time cooking on vacation =)

Bisquick in the shake and pour container. Just add water! Not as fabulous as more involved recipe pancakes, but so much easier when you are not in your own kitchen.

Soups, frozen at home, thawing in cooler, and heated over a camp stove are good. Sandwiches and hotdogs are always easy in a pinch.

I LOVED the different desserts we always had in Girl Scouts. Absolute best one: take a banana, slice down the curved side, leaving the skin intact, and fill the slit with chocolate chips, marshmallows, and nuts. Roll in foil, place in hot coals toward the edge of the fire. Takes as much time to heat as it does to put away the trash and supplies from making it, then break out the plastic/camp spoons and dig in. SO GOOD!

make my salsa! its easy to store and it doesn't have to be refrigerated always. When are you going? I can send you our jet boil and our camping stove.
