Overnight Coffee Cake

2 cups unbleached unsifted flour
1 cup sugar
1/2 cup packed brown sugar
1 cup buttermilk
2/3 cup shortening
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
2 eggs

Topping:
1/2 cup packed brown sugar
1/2 cup chopped nuts
1 tsp. cinnamon
1/2 tsp. nutmeg

Grease (not oil) and lightly flour bottom of a 13x9 inch pan. Blend all cake ingredients on low speed until moistened. Beat 3 minutes at medium speed. Pour into pan. In small bowl blend topping. Sprinkle over batter. Cover and refrigerate overnight. In the morning, preheat oven to 350 degrees and bake 30-40 minutes.

I brought this on Sunday for class! It's nice that you can prepare it in advance and then just bake it right before you need it!
